Clay-limestone with patches of gravel, silt and Eolian sand. Pure limestone sub-soil.
Wine making/ageing techniques:
Traditional. De-stemming, maceration with pumping over. Temperature
control.
Matured in vats.
Taste profile:
1/ Appearance: a very intense
colour.
2/ Bouquet: aromatic. Complex with notes of overripe fruit.
3/ Palate: good structure. Tannic and generous with slightly
floral flavours.
Food pairings:
Red and white meat,
cold meat, poultry and drier cheeses.
