Traditional with de-stemming, daily pumping over and temperature control.
Vatting for 15 to 20 days.
Taste profile:
1/ Appearance: a lovely, rather deep garnet-red colour.
2/ Bouquet: intense. Notes of vanilla combined with a certain freshness. Notes of blackcurrant, strawberry and cherry.
3/ Palate: a supple attack in the mouth. Opens out nicely with good tannic presence.
Food pairings:

All kinds of meat and game.
Cheeses.

Serving temperature : 18 to 20° c.
Ageing potential : 5 to 10 years.
